Warm Lentil Salad with Roasted Vegetables and Apples

Happy New Year! I hope you all survived the first days of January and the hangover is over. I am really excited about the new year, the new start, I have big plans for this year. I don’t really believe in new years resolutions, but I enjoy the concept of the new and fresh start.

Warm Lentil Salad with Roasted Vegetables and Apples

In Hungary we eat something with lentils on the first day of the year. They say it brings you luck, I say it tastes amazing! I love lentil soups, stews, but now I felt to start the year with a warming salad. This salad is made with sweet potato, beetroot and apple, so you can kickstart your year with all the winter goodies.

You can use any lentil types you like, I used now canned green lentils, but red, brown or puy lentils will be great too. Whatever you have at home.

Ingredients

Units Scale
  • 2 cups of cooked lentil
  • 1 small beetroot
  • 1 small sweet potato
  • 1 apple
  • 1/2 cup of almond
  • 2 tbsp hemp seed
  • 50 gr rocket
  • olive oil
  • salt, pepper, smoked paprika
  • for the dressing
  • 1 lime
  • 1/2 orange
  • 2 tbsp oil
  • 1 tbsp mustard
  • 1 tsp maple syrup
  • 1 clove of garlic
  • salt, pepper


Instructions

  1. Preheat oven to 200°C. Cut the sweet potato and beet into bite size pieces, place on a baking tray, season with salt, pepper and paprika and drizzle with a bit of olive oil. Bake for about 40 minutes.
  2. Cook your lentils or if you use canned ones, warm them up a bit in a sauce pan.
  3. For the dressing mix together a juice of a lime and a half orange, olive oil, mustard, maple syrup, a crushed garlic and some salt and pepper.
  4. Add the lentils, the roasted almonds, the thinly sliced apples and the roasted veggies to a big bowl, mix everything well together with the dressing. Serve it on the rockets with some seeds and nuts on top. Enjoy!

    New years, I agree, a time to refresh, reflect and regroup.. I’m not one to make resolutions.
    So many flavors going on in this salad, it sounds fabulous! Roasting the beets and sweet potato makes this recipe even more mouthwatering along with your maple dressing (with the delicious garlic!). I need more lentils in my life; thank you for your inspiration, Evi! Happy new year!
